Banana Bread with a Twist

If "with a twist" makes you think of a mixed drink, you're on the right track for this recipe!  This banana bread gets a little kick from a couple of tablespoons of brandy added in, which develops the flavor and gives an overall richness.  Give it a try!
The recipe comes from Smitten Kitchen, with just minor adjustments by me.

4 ripe bananas, mashed
1/3 cup melted salted butter
1 cup brown sugar
1 beaten egg
1 - 2 T brandy
1 t vanilla
pinch of salt
1 t cinnamon
1/2 t nutmeg
1/2 - 1 t allspice
1 1/2 cups flour

Mix butter into mashed bananas.  Mix in sugar, egg, vanilla, and brandy.  Sprinkle the baking soda and salt over the mixture and mix in.  Add flour last, mix.  Pour into small loaf pan and bake at 350 degrees for 50 minutes or until deep golden brown.

Note: This is yummy out of the oven, for sure, but the flavor really goes up a notch once it's sat in the fridge for a day.  I've been eating it cold, straight out of the fridge, with a bit of butter.  Delicious!

Note 2: This is not your typical banana-nut bread, so make it and expect something different and great!
